Saffron Lassi

Ingredients:

  • 2 cups plain yogurt
  • 1 cup chilled milk
  • 4-6 strands of saffron
  • 2 tablespoons sugar (adjust to taste)
  • 1/4 teaspoon cardamom powder
  • A pinch of salt
  • Ice cubes (optional)
  • Chopped pistachios and saffron strands for garnish

Instructions:

  1. In a small bowl, add 1 tablespoon of warm milk and soak the saffron strands for about 10 minutes.
  2. In a blender, combine yogurt, chilled milk, soaked saffron strands (along with the milk), sugar, cardamom powder, and salt.
  3. Blend until smooth and creamy.
  4. If desired, add a few ice cubes and blend again for a chilled lassi.
  5. Pour the saffron lassi into glasses.
  6. Garnish with chopped pistachios and a few saffron strands.
